At LB Sweets, we believe in making the most of every part of our process. When we spin our vibrant fairy floss using a commercial machine, a small amount of sugar inevitably gets left behind. As the machine heats up, some sugar crystallises on the edges of the bowl, forming a hardened layer that simply can't be spun back into the same fluffy, magical fairy floss. But waste not, want not – we’ve found a creative and delicious way to repurpose it!

Instead of discarding this crystallised sugar, we grind it down and transform it into the base for our sherbet. Thanks to the original colours and flavours of our fairy floss, this sherbet is packed with unique and tantalising tastes. Unlike the overly fine, powdery sherbet that many of us grew up with (and remember coughing on), ours is less dusty and far more enjoyable to eat.
